Easy Lemon Curd
A simple, whole-egg lemon curd recipe. Lemon juice and zest, mixed with sugar, one whole egg and butter.

- 1 large lemon (zest and juice needed)
- 4 oz or 110g sugar
- 1 egg, beaten
- 2 oz or 55g butter
Grate the lemon rind finely.
Squeeze the lemon and strain the juice.
Place the rind and juice in a small pan with the butter, sugar and beaten egg.
Stir over a gentle heat until thickened. Pour into a clean jar to cool.
