Mincemeat Crumble Bars
An oat, coconut, and wholemeal flour crumble mix, with a layer of mincemeat inbetween.
- 2 oz or 55g plain flour (all-purpose flour)
- 3 oz or 85g wholemeal flour (wholewheat flour)
- 4 oz or 110g butter
- 1 oz or 30g desiccated coconut
- 2 oz or 55g rolled oats
- 2 oz or 55g sugar
- pinch of salt
- mincemeat (around 12oz/350g)
Preheat oven to 350F/180C.
Place the flours in a bowl and rub in the butter until it resembles breadcrumbs.
Add the coconut, oats, sugar and salt and mix to combine.
Spread half the mixture over the base of an 8inch/20cm square tin. Press down lightly.
Spread the mincemeat over the base, being careful not to disturb the crumble mixture too much.
Sprinkle the remaining mix over the top. Press down lightly and evenly.
Bake in a preheated 350F/180C oven for 30-35 minutes. Leave to cool in the tin, then turn out and cut into squares.
