Mincemeat Crumble Bars

An oat, coconut, and wholemeal flour crumble mix, with a layer of mincemeat inbetween.

  • 2 oz or 55g plain flour (all-purpose flour)
  • 3 oz or 85g wholemeal flour (wholewheat flour)
  • 4 oz or 110g butter
  • 1 oz or 30g desiccated coconut
  • 2 oz or 55g rolled oats
  • 2 oz or 55g sugar
  • pinch of salt
  • mincemeat (around 12oz/350g)


  • Preheat oven to 350F/180C.
  • Place the flours in a bowl and rub in the butter until it resembles breadcrumbs.
  • Add the coconut, oats, sugar and salt and mix to combine.
  • Spread half the mixture over the base of an 8inch/20cm square tin. Press down lightly.
  • Spread the mincemeat over the base, being careful not to disturb the crumble mixture too much.
  • Sprinkle the remaining mix over the top. Press down lightly and evenly.
  • Bake in a preheated 350F/180C oven for 30-35 minutes. Leave to cool in the tin, then turn out and cut into squares.
