The Traybakes Family has returned from vacation and while recovering from jet lag, we’re still getting over the fact that the weather at home was (almost!) as warm as the weather we get in the summer here in Massachusetts! So, for sunny, summery days like these, when it’s too hot to turn on your oven, this No-Bake Peanut Crunch is the perfect solution.

This no-bake traybake has yet another simple list of ingredients and a straightforward recipe. Try to use salted peanuts if you can for the topping, as the mix of sweet and salty is hard to beat. And the cornflakes in the base give an added crunch. However, with the peanuts on top and the high proportion of chocolate in the mix, these can be a little tricky to cut cleanly. But that just leaves the extra crumbs as a bonus for the baker.

Ingredients

12oz/340g chocolate

2 tbsp crunchy peanut butter

2oz/55g cornflakes, crushed

4oz/110g salted peanuts

6oz/170g digestive biscuits/graham crackers, crushed

Method

1. Melt the chocolate then add the peanut butter and mix well.

2. Stir in the crushed cornflakes and digestive biscuits.

3. Spread into a lined traybake tin (8″/20cm square) then press the peanuts firmly onto the top.

4. Leave to set. Cut into slices. Enjoy!
