No-Bake Traybakes

Wonder Bites

This is another remarkably simple recipe.  Chopped nuts, cherries and coconut, covered in chocolate.  There is a little bit of coffee essence in the recipe, but to be honest, I didn’t notice a discernible coffee taste from these Wonder Bites.

Well, I say this is an easy recipe and it looks remarkably simple.  My baking went something like this…

Cream butter and sugar and mix in the other ingredients?  Check!

Roll into small balls and place in the fridge to firm up?  Check!

Cover with melted chocolate?  Err…check…just about…

Cover me with melted chocolate?  Check!

So, try not to worry about how tricky it is to cover small balls of nutty cherriness in chocolate.  Try not to worry about the little puddle of chocolate that is starting to form a ‘foot’ at the bottom of each ball.  Try not to worry about how the nice round balls now suddenly look squishy and misshapen.  Try not to worry about whether you can see yourself reflected in the chocolate as you’re taking photographs.  Just wait for the chocolate to set and enjoy!

Ingredients

2oz/55g butter

2 tsp coffee essence

4oz/110g icing sugar (powdered sugar)

2oz/55g chopped walnuts

3oz/85g desiccated coconut

3oz/85g chopped glacé cherries

6oz/170g chocolate, for coating

1.  Cream the butter, sugar and coffee essence until light and fluffy.

2.  Mix in the other ingredients.  Form into small balls and place on a baking tray lined with greaseproof/parchment paper.  I used 1 tbsp of the mix for each bite and got 23 in total.  Place the balls in the fridge to firm up while you melt the chocolate.

3.  Melt the chocolate in a double boiler/bowl placed over a pan of simmering water and then dip each ball in the chocolate to coat.  Place on some parchment paper to harden.  Then, once the chocolate has set, you can wonder at these bites!  Or just eat them.

    Oh CJ, i found your blog when searching for wonder bites..a taste of my childhood in Omagh in the early 60s. I had a flick around some of your recipes and before even reading your “About”, i knew you had to have a NI connection..wonderbites, snowballs and the little choc/cocnut/sultana bakes coming up next. Thank you for a morning of very happy memories (fifteens coming too..how much room do i have in my freezer!)
